Blood Orange Mimosas get their ruby color and sweet flavor from gorgeous blood oranges that are in season in the later winter. Wow your guests with these beauties at your next brunch party!
Squeeze the blood oranges in a large measuring cup. Strain the liquid through a fine mesh sieve to remove the pulp.
Divide the strained blood orange juice between six champagne glasses. Top with prosecco, garnish with an orange wedge and serve.
Add an optional 4 oz of vodka to the blood orange juice if you want them extra boozy.
