I love BLT sandwiches. I used to eat them when I was a kid. Who doesn’t love crisp bacon on any sandwich? Since we mostly no longer eat bread, I wanted something that would satisfy that craving for a BLT sandwich. These BLT Avocado Chicken Salad Lettuce Cups do exactly that. This recipe is perfect for paleo and low carb foodies alike. It is also Whole30 compliant if you pick a sugar free/nitrate free bacon.

Kyle’s Mayonnaise
We got a jar of Kyle’s Mayonnaise in our Keto Delivered subscription box. It’s so delicious. They mayo is keto, low carb, paleo and Whole30 compliant. It’s so hard to find Whole30 compliant mayonnaise that’s not made with avocado oil. I have to travel at least 20 miles to a Whole Foods in almost-downtown Houston to find some. We also make mayonnaise ourselves. But Kyle’s is great! It’s made with sunflower oil and organic eggs. There is no added sugar. The flavor is bright, and it’s great on this BLT Chicken Salad. BLT Avocado Chicken Salad – The Execution
Cook the bacon and chicken. We like to cook the chicken breast in the sous vide so it’s tender and juicy. Gather the tomato, avocado and mayo.
Next, chop the chicken and add to a large mixing bowl. Add the finely chopped cooked bacon and halved grape tomatoes. Mix to combine these ingredients.
Add the mayonnaise and stir to coat the meat and tomatoes. Next, cube the avocado and gently fold it in the chicken salad mixture. Serve with butter lettuce cups, or eat it right out of the bowl! But then it would be BL Avocado Chicken Salad. BLA Chicken Salad! Either way, it’s a delicious and filling lunch that’s perfect for paleo, Whole30 or low carb eaters alike!

The Best BLT Avocado Chicken Salad
This tasty and easy chicken salad has grape tomatoes, chunks of avocado and crispy bacon that's Paleo, Whole30 compliant and Low Carb!
Ingredients
- 3 whole chicken breasts
- 6 pieces bacon Whole30 compliant as needed
- 4 oz mayonnaise Kyle's Mayonnaise is recommended
- 1 cup grape tomatoes halved
- 2 medium avocados
- 1 head butter lettuce
Instructions

Cook the chicken breast and bacon. Dice the chicken breast and finely chop the bacon.

Combine the chopped bacon, chicken breast and halved grape tomatoes in a large mixing bowl.

Season with salt and pepper. Add the mayonnaise and stir to coat.

Cube the avocado and add to the chicken salad mix. Gently fold in the avocado to combine.

Separate into four separate serving bowls. Serve with a side of butter lettuce leaves.
Recipe Notes
Note - the chicken salad can be pre-made and stored in an air tight container for one day. The avocado starts to brown if it's stored too long.
