Has anyone been having a nutty week, or is it just me? I needed a quick and simple lunch to feed the hubs and me for a few lunches.  This Low Carb BLT Chicken Salad with Avocado fit the bill. It was quick to whip up,  was full of healthy fats, and only required a few simple ingredients. With the right bacon and mayo, the chicken salad is Whole30 compliant, Paleo and Low Carb!

The Ingredients

This BLT Chicken Salad has five simple low carb ingredients. Mayonnaise, tomatoes, chicken, bacon and avocados. Serve in lettuce cups or enjoy straight out of a bowl.

The Bacon

Look for Whole30/Paleo-approved bacon if you are avoiding nitrates, nitrites and sugar. Otherwise, my favorite bacon for this recipe is a thin sliced, applewood smoked bacon. I bake it in the oven until it’s nice and crisp. The bacon will keep it’s texture if it’s cooked well.

The Chicken

I always love sous vide-cooked chicken for my chicken salad. I use the Anova Precision Cooker sous vide. It’s great, and cooks the chicken perfectly every time.

Tomato and Avocado

Tri-colored cherry tomatoes are excellent in this recipe. Halve the tomatoes and dice up an avocado for the salad.

Mayonnaise

Kyle’s Farmstead Mayonnaise is light, lemony, and perfectly paleo. It’s made with sunflower oil, and one of my favorite Whole30-approved mayonnaise brands out there.

The Execution

If the chicken is not pre-cooked, get that going first so it has time to cool. I like using the sous vide or cooking in a 350 degree oven until the internal temperature is about 148 degrees. Cook the chicken and let it chill in the fridge until completely cool.

Meanwhile, set the oven to 350 degrees. Line a baking sheet with foil, and cook the bacon on a grate placed on top of the foil until very crisp. While the bacon is cooking, dice the cooled chicken, halve the tomatoes and dice the avocado. Place in a bowl. Once the bacon is cooked, chop it finely, and add it to the bowl of chopped ingredients. Gently fold in the mayo with a spatula.

Serve immediately or cover and keep in the fridge until ready to use. With the avocado, I wouldn’t recommend keeping it for more than a day.

Low Carb BLT Chicken Salad

A great low carb chicken salad, this BLT Chicken Salad brings all the flavors of the classic BLT sandwich, but without the carbs!

Ingredients

  • 1.5 lbs chicken breast, cooked and chilled
  • 4 pieces bacon
  • 6 oz avocado diced
  • 4 oz tri-color grape tomatoes halved
  • 4 oz mayonnaise Kyle's Farmstead preferred
  • lettuce cups for serving

Instructions

  1. Set the oven to 350 degrees. Cook the bacon in the oven on a grate until extra crispy. Remove from oven once cooked and set aside.

  2. Meanwhile, chop the chilled chicken and place in a bowl. add the halved tomatoes, and diced avocado. Finely chop the bacon and add it to the bowl. 

  3. Add the mayonnaise and gently fold the ingredients with a spatula until mixed. 

  4. Serve immediately with lettuce cups or in bowls. If not serving immediately, store in the fridge covered in saran wrap until ready to serve. *Note - stores in the fridge for about a day (due to the avocado)*
