Hi everyone. It’s been a week or so since I have written. Life is a little hectic right now, so I took a short break from blogging. Work is busy for both the hubs and me. My social calendar is a little more full than normal, which I am not complaining about. I went to more concerts in the last three weeks than I have in the last three years (and I still have Lady Gaga in December – woo!). I helped host a bachelorette, upon which I discovered going to bed at 3:30 a.m. makes for a painful next-day as a 30 year old. Old friends came to visit, and new friends were made. These are all good things of course, but it’s made it a little hard to keep up with the blog! Rest assured, I still managed to make some tasty recipes while I was away. One of them was this chili. This recipe is a staple in our house during the winter months. It’s meaty, a little spicy, and full of all the good things. You can whip up this easy Paleo Chili (that’s also low carb) in no time at all.

The Best Easy Paleo Chili
This meaty, flavorful, Easy Paleo Chili is ready in a snap, and will warm you up on a cold fall or winter day.
Ingredients
Chili
- 1 tbsp oil
- 10 oz yellow onion about 1 medium, diced
- 5 oz red bell pepper about 1 medium, diced
- 16 oz sausage or ground pork
- 16 oz grass-fed ground beef
- 5 tbsp chili seasoning mix (below)
- 1 28 oz can crushed tomatoes
- salt and pepper to taste as needed
- fresh sliced jalapeno for garnish optional
Chili Seasoning Mix
- 4 tbsp chili powder
- 2 tbsp paprika
- 1 tbsp cumin
- 2 tsp garlic powder
- 2 tsp oregano
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
Instructions

Heat oil in a heavy-bottomed skilled over medium high heat. Add the onion and bell pepper and cook until translucent, about 10 minutes.

Add the ground beef and ground pork/sausage. Break apart as the meat is cooking to form crumbles. Cook through until no pink crumbles are left.

Add the chili seasoning mix, and stir to coat. Dump in the canned tomatoes. Heat through until just bubbling, stirring occasionally. Season with more salt and pepper as needed.

Serve in a bowl topped with fresh sliced jalapeno (optional). If you are into dairy, top with cheese and sour cream. Enjoy!
