Beets. I love them. My husband, not so much. We are on day ten of Whole30, and I was trying to figure out how to incorporate some GIANT beets we bought at the market into our weekly meal plan. I ended up with this fabulous Beet and Apple Salad with Marcona Almonds. We also just bought a KitchenAid Spiralizer. If you spiralize anything, you should definitely invest in one! The attachment lets you made noodles and spirals of varying sizes. It also comes with a peeler attachment so you can peel apples and other vegetables with zero effort. I was able to spiralize four beets and two apples in less than five minutes!
Whole30 Beet and Apple Salad with Marcona Almonds
Look at this colorful salad. It’s stunning and tasty. Apples and Marcona almonds are two of my favorite foods to eat together. The roasted beets paired super well also! You can read more about my ridiculous obsession with Marcona almonds here. Now back to the salad.
This salad was pretty easy to put together. Heat the oven to 400 degrees. Start of by spiralizing three or four beets with one of the noodle attachments. Spread the beets on a parchment-lined baking sheet and drizzle with olive oil and salt. Roast the beets for about 20 minutes or until mostly soft.
While the beets are cooking, spiralize two medium organic apples with the (yes this exists) apple spiralizer blade. Be sure to use the peeler, too! Seriously though, one of the blades has a picture of an apple on it. It worked perfectly on my apples.
Once the beets are done, pull them out of the oven to cool for a few minutes. Grab greens of your choice (I love Central Market Power Greens), and spread on a serving plate. Top with the spiralized beets and apples. Sprinkle chopped Marcona almonds and drizzle with a Whole30 compliant balsamic vinaigrette. I love Tessemae’s Organic Balsamic dressing with this salad. The balsamic flavor doesn’t overpower the beets and apples, and it’s Whole30 compliant!
We had this as a side salad with roasted chicken. The proportions in the recipe below are enough for two moderately large side salads. Adding more greens, beets and Marcona almonds could definitely turn this into a Whole30 vegetarian (or even vegan) meal.
